Hot Honey Garlic Salmon Bowls

Ingredients

  • 1 cup long grain rice
  • 6 tablespoons Dairy Free Becel Plant Butter - Garlic
  • 4 salmon fillets (4 to 6 ounces each)
  • 2 cups sliced zucchini
  • 2 ears of corn
  • 3 tablespoons honey
  • 3 tablespoons your favourite hot sauce
  • Fresh thyme

Instructions

  1. Add 2 cups water, rice and 1 tablespoon Dairy Free Becel Plant Butter - Garlic to a medium saucepan. Add salt if desired and bring to a boil over high heat. Reduce heat and simmer covered 15 minutes or until rice is cooked.
  2. Toss zucchini with 1 tablespoon Dairy Free Becel Plant Butter - Garlic, brush both ears of corn with 1 tablespoon Dairy Free Becel Plant Butter - Garlic.
  3. Combine the remaining 3 tablespoons Dairy Free Becel Plant Butter - Garlic with honey and hot sauce and brush salmon with half of the hot honey mixture.
  4. Grill salmon, corn and zucchini until done. Cut corn off the cob. Arrange salmon and vegetables in bowls with rice, and your favorite toppings. Drizzle with the remaining hot honey mixture and garnish with fresh thyme if desired.
